Pusa 1121 is a patented Basmati rice from North India, which has the longest grain in the world, Pre- & Post-cooking.
It has two varieties - White & Golden.
Based on the milling process, both varieties could be divided as -
#Brown rice - most nutritious, retains bran, takes longer to cook, unesthetic appearance, tendency to burst on cooking, chewy texture, ideal for casseroles, stir-fry dishes
#White polished rice - loses bran & nutrition, cosmetic look, more easily break during handling, very aromatic, sweet taste, used as plain steam rice
#Sella or Parboiled rice - boiled as paddy before de-husking, retains most of the nutrients, highly translucent, easy to cook & handle, slightly rancid taste, preferred for Biryani/Pulav or with spices, slightly shorter shelf life
