White pepper is obtained by taking the outer skin of black pepper
by standing in water for a few days and drying it in the sun. It
tastes like black pepper, but is more bitter. Creates a pleasant
burning sensation in the throat.
It is generally used in light colored sauces such as cream sauce
which do not change color. A very popular spice in European
cuisine. It is widely used in fish dishes.
