Rye is a close relative of wheat, but much more useful than the latter. Its protein contains a much larger amount of amino acids valuable for the body, and the grains contain much less gluten. Rye flour has five times more fructose than wheat flour. And its products are rich in hemicellulose and fiber, which improve the microflora.
