Baldo Rice is a little less known than our other cultivated rices, but it should be widely discovered for its excellent properties in the kitchen. Among our rices, after Carnaroli, it is the one we recommend most for a home-made risotto with good cooking resistance and, moreover, having less starch than the others (this can be seen from the crystalline appearance of the grain), it is a excellent rice also eaten cold or in salad, or even better pilaf or baked.
