According to INC’s recent statistics (2017-2018 yearbook), Iran with a five-year average of 162,000MT counts for 13% of the world’s dried grapes production and is among the top 3 producers/exporters worldwide.
Raisins are mostly produced in the northern parts of Iran and vary in color, shape and taste from east to west. The harvest usually starts mid-September. There are mainly five types of raisins available for exports:
- Golden (aka Angori)
- Sultana (aka Tizabi)
- Malayeri (aka Light Sultana)
- Sundried (aka Aftabi)
- Kashmari/Golden Kashmari (aka Green Long/Golden Long)
With the exception of Sundried raisins which are naturally dried, all other varieties are dipped in the potassium carbonate solution to eliminate the oily cover on the skin of the berries and expedite the drying process thus retaining a lighter color in the final product.
Compared to other counterparts in the region, Iranian sultanas with a lower moisture are more free-flowing and sweeter in taste thus making them a favorite in the bakery industry, mostly because they do not get easily chopped in the bakery mixers. In addition, because of the lower moisture you will receive a better value for money, meaning more raisins and less water.
