Guar Gum is derived from the ground endosperm part of the seed of the guar plant, Cyamopsis tetragonolobus, of the Leguminosae family. The plant is cultivated commercially in India.
Guar Gum is primarily used to thicken aqueous solutions, and control the mobility of dispersed or solubilized materials. The water-binding characteristics of Guar Gum makes it ideal as a rapid hydration agent in the formation of viscous colloidal sols. It is versatile as a thickener, viscosity modifier, stabilizer, and binder.
