A medium-priced fish. Parrot fish is sold whole and in fillet
form. Look for lustrous skin with bright and bulging eyes; firm
flesh. Fillets should also be lustrous with no brown markings.
Both should have a pleasant sea smell.
Sizes: 500/800, 800/1000, 1000/1500, 1500/2000, 2000/2500, 2500+
(gr/pc).
Spec.: Head on, gill on, gut on, scale on.
Packing: IQF, 1x10kg (100% NW, 10% protective glaze) or buyer's
requirement.
They have large thick scales. Their coloring ranges from reds to
greens, blues and yellows, as well as grays, browns and
blacks.
Parrotfish flavor is very mild and buttery. Not quite as white as
grouper (slightly more pinkish), but just as flaky.
