Desiccated coconut is the shredded white meat of the coconut from which moisture is extracted. It is produced from fresh matured coconuts and is available in different cuts depending on how it is processed. Desiccated Coconuts are graded by their cutting size (fine grade and medium grade). Desiccated Coconut is perfect for use by various industries that require the natural exotic taste of coconut. Desiccated Coconut is ideal for use as fillers, toppings, and ingredients, especially in the baking of biscuits, snack bars, cakes, cookies, and so on.
The value of Desiccated Coconut lies in the fat content. Desiccated Coconut is categorized into full-fat (high fat) or reduced-fat (low fat). “High Fat Desiccated Coconut” has a minimum of 60% fat, any lesser is a reduced fat Desiccated Coconut. Generally, DC is considered a full-fat product. However, a partially defatted product, which is the by-product after extraction of the milk, is also available and commonly termed “Low Fat Desiccated Coconut”. The fat content of this product can vary but is usually in the range of 45% – 55% is a reduced fat Desiccated Coconut.
DC in the standard cut sizes of Fine and Medium is widely used in the Confectionery and Bakery trades as toppings for cakes and pastries; fillers for candy bars; chocolates, etc.
