Wheat flour is a powder made from the grinding of wheat used for human consumption. Wheat varieties are called "soft" or "weak" if gluten content is low, and are called "hard" or "strong" if they have high gluten content. Whereas the whole wheat version is made by grinding entire wheat kernels into a powder, white flour removes the most nutrient-rich parts — the bran and germ ( 21 ). Thus, whole wheat flour is widely considered healthier. It's a good source of protein, fiber, and a variety of vitamins and minerals. Usually a whole wheat flour would be a stone-ground wheat, as it is literally the whole grain milled into flour. It may also be referred to as wholegrain. Wholemeal flour has the germ and some other layers removed so it's not technically “whole”. One key difference between whole wheat flour and plain white flour is the fibre content. Whole wheat flour naturally contains the level of fibre found in wheat. Soft wheat flours, like all-purpose flour, are usually about 8 to 12 percent protein, while hard wheat flours, like bread flour, contain around 12 to 15 percent protein.
