Coconut sugar is made from a tree called Cocos nucifera, which naturally grows in tropical countries like Indonesia, Thailand and Philippines. It is often confused with brown sugar, where the latter is a mixture of white sugar and molasses, which is completely different to coconut sugar. Coconut sugar is made from the nectar sap of coconut tree’s flower-bud stem, which is boiled for several hours until it thickens, changes color, and finally becomes granulated. Coconut sugar has lower GI than white sugar and brown sugar, hence it is often used as an alternative natural sweetener.
