It is a valuable seaweed species for its high carrageenan content, which makes it an important raw material for various industries, including food, cosmetics, and pharmaceuticals. κ-Carrageenan or kappa Carrageenan forms strong, rigid gels in the presence of potassium ions, and reacts with dairy proteins. It is sourced mainly from Kappaphycus Alvarezii or Eucheuma Cottonii.
